Myrtille Trompe-l'œil

Sold as a four-piece flight on a single plate, with two pre-cut so the cross-section is visible. Each "berry" is a small dome of blueberry mousse on a brown-butter sablé crumb, finished with a deep-purple velvet that fades to bloom-grey on the shoulders. Inside the cut ones: dark blueberry compote with a squeeze of lemon.
