Citron en Trompe-l'œil

A trompe-l'œil entremets in the shape of a single Eureka lemon, finished with a sprayed cocoa-butter velvet that mimics the dimpled rind. Cut into it and the illusion ends: candied-lemon curd folded through Italian meringue cream, layered over a brown-butter sablé. The candy comes from lemons hand-peeled and slow-confited in our kitchen — that's where the depth lives.
