Cerise Trompe-l'œil

A small dome glazed in deep cherry red, crowned with a real cherry stem we cure ourselves so the proportions read true. Beneath the glaze: white-chocolate ganache, a center of dark-cherry compote spiked with kirsch, and a thin almond sablé. One of our quietest pieces and one of the most technically demanding.
