The most photographed piece in the case. The dimpled velvet skin is sprayed by hand — no two are perfectly identical, which is what sells the illusion. Inside: mascarpone cream cut with a slow-reduced strawberry-and-aged-balsamic confit, on a vanilla sablé. The greens are a separate piece of pulled marzipan we shape and dye that morning.
