We poach Bartlett pears in muscat wine with star anise and a strip of orange peel until they surrender. The compote goes inside a pillow of brown-butter mousseline, and the whole thing is glazed in a honey-yellow mirror that catches the light the way ripe pear skin does. Pairs beautifully with a single espresso.
